Homemade Banana Chocolate Chip Muffins
Waffles are a favorite menu item when we dine out for breakfast, but all it takes is a waffle iron and some simple ingredients to make your own at home. These chocolate chip banana waffles are a perfect one to try if you’ve got a sweet tooth!
Ingredients
Flour — When I bake with all-purpose flour I opt for the unbleached version. Bleached flour is very white, but it’s also treated with bleaching agents that I don’t really need in my food. You can substitute whole wheat flour for half of the all-purpose flour without impacting the recipe.
Eggs — The recipe calls for large eggs.
Bananas — This is where you get to use up some of those overripe bananas sitting on the counter! The riper they are, the sweeter the waffles. If you happen to have whole bananas in the freezer, it’s easy to thaw them out and squeeze the pulp into the batter. You won’t even need to mash them, since they’ll be plenty soft from being frozen.
Milk — Use whatever type you typically keep on hand. The addition of milk helps the waffles crisp up nicely. You can certainly use nut milk if you prefer.
Chocolate Chips — Use your favorite chocolate chip, dark or semi-sweet, regular size or mini chocolate chips.
Cocoa Powder — This is what gives these banana waffles a double chocolate burst of flavor!
Sugar — Use your favorite brand of granulated cane sugar. You can use brown sugar if you prefer.
Oil — The recipe calls for vegetable oil, which is pretty generic. You can use avocado oil, canola oil, or sunflower oil. If you like the flavor of coconut oil, you can use that but you’ll need to melt it before adding it to the recipe.
Making these Waffles
Begin this recipe by whipping the egg whites with sugar. This creates a fluffy chocolate chip waffle. If you’re too strapped for time, you can skip this step, but the resulting waffles won’t be quite as fluffy. (They’ll still have all the double chocolate-y goodness, though!)
Combine the dry ingredients (except the chocolate chips). Add the milk, mashed bananas, oil, and vanilla and mix until just combined.

Fold the whipped egg whites into the batter. Avoid over-stirring.

Stir in the chocolate chips.
Heat the waffle maker thoroughly and use a brush to grease the iron. Scoop waffle batter onto the hot griddle and spread slightly before closing the lid. They’ll be ready to eat in about 8 minutes or so.

Serving these Waffles
Top with extra chocolate chips, nuts, and powdered sugar.
Add a dollop of whipped cream to really make these waffles special.
These chocolate chip waffles would also work very (very!) well with a slab of vanilla ice cream sandwiched in the middle. DIY ice cream sandwiches!

Oh-So-Sweet Banana Chocolate Chip Waffles
If you can never get enough chocolate, these waffles are for you. Plus? They have very little refined sugar, thanks to the sweetness of the bananas.
Ingredients
- 3 large eggs, separated
- 2 tablespoons sugar
- 2 1/2 cups all-purpose flour
- ½ cup cocoa powder
- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 bananas, mashed
- 2 cups milk
- ¼ cup vegetable oil
- 2 teaspoons vanilla extract
- ¾ cup mini chocolate chips or regular
Instructions
- Using a stand or handheld mixer, beat egg whites and sugar until stiff peaks form.
- Combine dry ingredients (except the chocolate chips in a large mixing bowl. Add the mashed bananas, milk, oil, and vanilla extract and stir together just until combined.
- Fold in the whipped egg whites, until just incorporated.
- Add chocolate chips.
- Pour the waffle batter into a hot waffle iron; cook according to manufacturer's instructions or follow these guidelines for making waffles.
- Top as desired, with maple syrup, chocolate chips, nuts, powdered sugar, and whipped cream.
Notes
Makes 6-8 waffles, depending on the size of your waffle iron.
