- 1 teaspoon fresh ginger, grated
- 1 tablespoon lime juice fresh
- 1 tablespoon honey (or brown sugar)
- 1 tablespoon sesame oil
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 pound ground turkey
- ½ cup carrots, cut in matchstick
- Lettuce leaves, rinsed well and dried (romaine or butter lettuce work best)
- ½ cup crushed peanuts
- ½ head cabbage, chopped thinly (green or purple)
- 2-3 green onions, sliced
- Lime wedges for serving
Instructions
In a medium-sized bowl combine soy sauce, sriracha, ginger, lime juice, and honey. Whisk until combined. Set aside.
Heat olive oil in a large skillet and add ground turkey meat. Cook and crumble over medium heat until meat is almost cooked through.
Add carrot sticks and continue cooking and stirring for 2-3 minutes.
Add minced garlic to pan and cook for an additional 2-3 minutes.
Pour the sauce into the pan and reduce heat to low. Simmer for 2 minutes, or until the sauce is absorbed.
To assemble the lettuce wraps, place a lettuce leaf on a plate. Add a layer of shredded cabbage, top with the warm meat mixture, and sprinkle with peanuts and green onions. Garnish with a lime wedge.
Notes
If you'd like, serve with optional water chestnuts for additional crunch.
A little sprinkle of rice vinegar is nice, too.
